Chicken Wing / Salmon , Risoni and Pea / BBQ Prawns

Chicken Wing Recipe.


16 chicken wings.
1/2 cup mayonnaise.
1/4 cup buttermilk.
2 teaspoons lemon juice.
1/4 teaspoon hot paprika.
1 small brown onion chopped(coarsely).
100g ( 3 1/2 oz ) danish blue cheese.
1/3 cup hot chilli sauce.
80g ( 2 1/2 oz ) melted butter.
4 celery storks ( 400g or 12oz ) cut into sticks.
1/2 cup sour cream.
Oil for deep frying .

Mix (blend) mayonnaise,milk,cream,paprika,onion,juice and 1/2 of crumbled cheese until smooth then add remaining crumbled cheese. stirring lightly.
Then put in refrigerator covered for about 2 hrs.

Cut up chicken wings into 3pcs, cut tips off and throw away. Heat oil in pot or deep fryer and cook chicken then drain on paper towels. Then put chicken in large bowl and add hot chilli sauce and butter, stirring to mix. Serve with mayonnaise mixture and celery sticks.

Salmon ,Risoni and Pea Salad

Poach 500g ( 16 oz ) salmon fillets when cooked flake in to pieces or chunks.
3 cups of cooked risoni ( rice ) .
1 1/2 cups baby peas ( cooked ).
100g ( 3 1/2 oz ) baby spinach leaves.
2 tablespoons of olive oil and 1/4 cup of lemon juice.
just combine the lot and serve .

BBQ Prawns.

1kg ( 32 oz ) large prawns ( shelled and de veined) leave tails intact.
1/4 cup olive oil.
6 cloves of garlic (crushed).
1 small red thai chilli , chopped finely.

Heat oil in wok or pan. Add garlic and chilli fry till fragant , take off heat to cool.
Then pour into bowl and add prawns. Marinate over nite , then thread onto skewers to grill on bbq .
Or instead just cook up in wok or pan with out marinating over nite and serve with finely chopped parsley .
