Florentines

prep time 10minutes.

3/4 cup sultanas.
2 cups cornflakes.
3/4 cup flaked almonds ( roasted ) .
1/2 cup red glazed cherries ( quartered ) .
2/3 cup sweetened condensed milk .
60 gram ( 2oz ) melted white eating chocolate .
60 gram ( 2oz ) melted dark eating chocolate .

Pre heat oven 180 c ( 350 f ) Line two oven tray with baking paper.
Combine sultanas, almonds , cherries , cornflakes and in bowl, mixing well.

Then drop heaped teaspoon of mixture 5cm ( 2 inches ) apart on to trays and bake. uncovered for 5 minutes or until lightly brown , then cool on trays.

Finally spread half of the bases with white chocolate and other half of bases with the dark chocolate and if you want you can run fork thru bases to make waves . Then allow chocolate on bases to set at room temperature. (makes about 45 )
Or you could use dessert spoon instead to make larger ones but space further apart when putting on tray to cook........enjoy


Good old Rocky Road
prep time 20 minutes.

300g ( 9 oz ) roasted coconut marshmallows ( chopped coarsely ).
400g ( 13oz ) of turkish delight ( chopped coarsely).
1/4 cup roasted blanched almonds ( chopped coarsely).
1/2 cup roasted shelled pistachios.
450g ( 14oz ) white eating chocolate ( melted ).

Grease two 8cm x 26cm ( 3 in x 11 in ) bar cake tins then line tins with baking paper ( base and sides as well) .
In a large bowl combine marshmallow, nuts and turkish delight , Working quickly stir in chocolate and spread into tins . Pressing mixture down firmly to flatten top .
Refrigerate until set...........................................
(makes about 30 bars when cut up ).

How to melt chocolate.
Place chocolate in heat proof bowl and place over saucepan with simmering water ( make sure bowl does not touch water ) . Remove bowl when chocolate feels soft and stir until smooth.
.... ( never use a wooden spoon to stir chocolate , as it absorbs the heat and can make chocolate mixture go off)
