To all my followers , been busy lately .


Polenta and Corn fritters

1 cup boiling water (or stock for added flavour).
1 cup polenta.
1 teaspoon salt.
1 egg,lightly beaten.
1/2 cup milk.
40g ( 1 1/2 oz ) butter (melted).
1/2 cup self raising flour.
125 g ( 4oz ) can of corn kernels (drained).
1/2 cup grated cheddar cheese.
2/3 cup of bottled chunky tomato salsa.

Combine hot water(or hot stock) , polenta and salt in heatproof bowl. cover and stand for 10minutes.
Stir egg , milk and melted butter in to polenta mixture and then add flour , corn and cheese , stir until batter is combined..
Heat a large fry pan thats been lightly oiled then pour in 1/4 cup of mixture and spread mixture out to make around shape using a spatula. Cook for 2 minutes each side or until fritter is brown and cooked, remove from pan and cover to keep warm and continue cooking the rest.
Serve fritters with the salsa.....................

Thai coconut prawns

24 uncooked (med) king prawns ( 1kg or 2lb).
1/4 cup plain flour.
2 eggs ( beaten lightly).
1 1/2 cups of shredded coconut.
1/2 cup sweet chilli sauce.
2 tablespoons of water.
2 tablespoons of fresh coarsely chopped coriander leaves .
Pre heat oven to moderate ( 180c or 350f ) . Lightly oil 2 oven trays.
Shell and devein prawns , coat prawns in flour then shake off excess and then dip in egg wash . Then coat in coconut.
Thread each prawn onto a skewer and place on oven trays in a single layer. Cook uncovered for about 15 minutes or until cook thru.
Combine remaining ingredients in a small bowl.
Serve prawns hot with the dipping sauce..................

My tip for the week.....
To remove fish odour from hands and fingers rub lemon and salt on them to remove odour
