Battered Prawns and Old style Fish Cakes

A simple batter to make


1/2 cup cornflour
1/2 cup plain flour
1 lge egg lightly beaten
3/4 cup cold soda water
1kg ( 2lb ) uncooked lge prawns devained and shelled
vegetable oil for frying

sift flours together in medium bowl ,then add egg and cold soda water
and mix with fork till combined slightly . let stand for 5 minutes.
heat oil then dip prawns in batter and then drain excess off.
cook until prawns are cooked and slightly brown........

The same for scallops, squid or fish . then serve with home made chips.........

A good old Fish Cake

1 cup ( 130g ) mash potato
1 cup ( 130g ) cod or tuna or salmon
1 tbl mayonnaise
2 tspns chopped parsley
1 egg yolk ( lge egg)
3 tspns grated onion
salt an pepper to taste

coating for fish cakes

1 egg, 2 tbl spoons plain flour and 1/2 cup bread crumbs ( dried)
oil for frying

Remove skin and bone from fish and break fish into pieces .
Put fish, potato, mayonnaise, parsley, egg yolk, onion, salt and pepper in bowl, combine by stirring gently.
Put in refrig for 30minutes. Then beat egg and milk in bowl.
shape patties in balls ( 6) then roll them lightly in flour , then roll in egg mixture ,then breadcrumbs and flatten to shape.
cook in heated oil until golden brown and cooked thru ( medium heat).......
