Chicken Liver Risotto
2oz Butter
1 Onion finely chopped
1 lb chicken livers
1/2 red or green pepper, finely chopped
salt an pepper to taste
2 cups rice
4 cups chicken stock
or water with chicken stock cubes
parsley to garnish
Melt butter in large heavy saucepan. Add onion and cook until golden.
Add chicken livers and cook for 1 minute.
Add peppers , salt, pepper and rice. Cook stirring constantly until rice begins to change colour.
Add boiling stock , cover and cook over gentle heat until tender and all liquid is absorbed, about 20 - 25 minutes.
If necessary add a little more stock or water during cooking.
Garnish with parsley and serve hot ..Serves 4 ???
