Mixed - Berry Buttermilk Muffins
3/4 cup caster sugar.
1 egg, beaten lightly.
1 teaspoon vanilla extract.
2/3 cup (160ml) vegetable oil.
3/4 cup buttermilk.
7oz to 8 0z (200g) frozen mixed berry's.
Pre - heat oven ...moderately hot 400 f (200 c) , grease a 12 hole 1/3 cup (80ml) muffin tin.
sift flour and sugar into large bowl then stir in rest of ingredients.
spoon mixture in to muffin tin and bake, uncovered for about 20 minutes. Turn on to wire rack to cool..........
