Fruit and Nut Rolls
This can be enjoyed sliced with butter or as a pudding.........
4 x 420 gram empty bake- bean or soup tins that have been cleaned well.
375 grams packet mixed dried fruit
3 tblsps golden syrup
1 1/2 cups milk
1 1/2 tsp bicarbonate of soda
2 1/2 cups self-raising flour
1/2 cup chopped nuts
1. Place mixed fruit, golden syrup, milk and bicarbonate of soda in a saucepan.
Bring to boil for 1 minute. Remove from heat, cool, then stir in sifted flour and nuts.
2. Grease the 4 clean, empty tins and line bases with baking paper. Divide fruit mixture evenly into prepared tins. Stand filled tins in large saucepan with enough boiling water..one third up side of tins..
3. Cover pan and boil gently for 1 hour or until mixture is cooked. Check with skewer and remove tins from pan and let stand for 5 minutes then turn out on to wire rack to cool.
Will keep frozen in plastic wrap for up to two months...
